The 2002 Spring Mountain Vineyard Elivette is a full-bodied red blend showcasing ripe, concentrated black cherry, blackberry jam, and dark chocolate flavors, complemented by nuances of cola, dark spices, and a touch of kirsch. Its texture is plush and velvety, with well-integrated tannins softened by extended French oak aging. The wine carries earthy undertones and a lingering mocha finish, reflecting the warm vintage’s ripeness and depth. This blend of Cabernet Sauvignon, Merlot, and Cabernet Franc offers a rich, opulent profile reminiscent of a refined Bordeaux, yet distinctly expressive of Spring Mountain’s terroir. It is drinking well now but retains enough structure for further enjoyment.
Serve slightly below room temperature alongside roasted lamb or mushroom risotto to highlight its complex layers.
