Tightly focused and refined, the 2021 Stag’s Leap Rancho Chimiles Cabernet Sauvignon shows concentrated black currant and blackberry framed by violet and a graphite-like pencil-lead note.
The palate layers dark chocolate, tobacco leaf and a hint of allspice over polished yet firm tannins, giving the wine a poised, almost Old-World restraint reminiscent of a Left Bank Bordeaux in structure. Oak is present but integrated, lending cedar and subtle vanilla without overpowering the fruit. It drinks with impressive tension and should cellar well while already offering enjoyable depth.
Serve slightly below room temperature with grilled lamb chops or a mushroom and thyme risotto.
