Firm, polished Cabernet with concentrated dark-fruit flavors and a plush, finely grained texture. The nose shows ripe black cherry, blackberry and plum framed by mocha, vanilla and a touch of cedar from oak aging. Medium‑full bodied with balanced acidity and resolving tannins that give the wine structure and a long, slightly spicy finish. Reminiscent of classic Napa Cabernet in style but with a brighter, mineral-edged profile from Knights Valley.
Serve slightly below room temperature with grilled ribeye, herb-crusted lamb, or aged hard cheeses.
