Bright, focused and refined, the 2007 Spring Mountain Vineyard Elivette (3L) shows lifted red-fruit aromatics of cranberry, cherry and strawberry layered with sweet baking spice and a touch of molasses.
The palate is medium-plus with a balanced core of red and black fruits, subtle cola and dark chocolate notes, and a firm, fine-grained tannin structure that still benefits from gentle airing. Oak influence is present but integrated after long aging, giving the wine a savory dried-herb edge that adds complexity rather than weight. Compared with classic Napa Bordeaux-style blends, it leans more toward elegant restraint than opulent power.
Serve lightly decanted and pair with herb-crusted roast lamb or mushroom ragù.
